How to Make Chicken Kabsa (Step-by-Step)
Step 1: Sauté the Base
Heat oil in a large pot over medium heat. Add chopped onions and cook until golden and soft. Stir in the garlic and cook briefly until fragrant.
Step 2: Build the Flavor
Add chopped tomatoes and tomato paste. Cook until the mixture thickens and oil begins to separate. This step creates the rich base that gives Kabsa its signature taste.
Step 3: Add Chicken and Spices
Place the chicken pieces into the pot. Add salt, black pepper, paprika, and all the ground spices. Stir well to coat the chicken evenly. Add the whole spices and dried lime.
